Sounds like a CRAZY amount of restrictions. Some days my brain is totally wiped πŸ˜… from brainstorming and looking for new recipes and planning for meals. Thank goodness for the Internet’s recipe book and those hypnotizing Tasty videos that have helped inspire me to keep creating and experimenting with new food everyday. Otherwise, I would have nothing to post of my Facebook page 😁
Dinner meals are most challenging to plan for me because of the VAST dietary needs of our family but I am determined to make it less challenging by PUSHING ON and just trying new things everyday! That is how I will get BETTER! Like Autumn in 21 Day Fix says, “It doesn’t get easier, you get better.”

My lunches for the week have changed a lot since I’ve started my fitness and clean eating journey. I used to have a lot of sandwiches (mmmm..bread) and not a whole lot of veggies (I am a veggie HATER.. I will dedicate a whole post to that). This week’s lunch is a simple one. A homemade veggie burger (From the Oh She Glows! cookbook or find it HERE)Β on a bed of lettuce with some sliced cucumbers for style. Not bad for a veggie hater πŸ˜‰ Then I have a two eggs that are boiled to PERFECTION (I am a boiled egg enthusiast and can and will talk to you about boiling methods anytime, anywhere). Top with a GENEROUS amount of Sriracha, and you’ve got yourself a meal worth having every single day of the week! πŸ˜„

Lunch in Fix Containers –>

Bed of lettuce and cucumbers: 2.5 greens

Homemade veggie burger: 1 yellow, 1 Orange

Best boiled eggs: 1 red

Sriracha: FREE seasoning! Use as you please πŸ˜‹

Meal Prep time –>

Veggie burgers: 1 hour total (30 mins prepping and 30 mins baking)

Salad prep: 5 mins (washing cutting and container-ing)

Boiled eggs: 15 mins (bring to a boil, let sit and peel)
About an hour and twenty minutes total. Prep once and eat healthy all week long!!! ❀️

My Five Minutes

I went to a great workshop a couple of years ago where the presenter said, “If you don’t tell people who you are and what you’re about in the first five minutes of them meeting you, they’ll make up a story about you and who you are anyway.” So to save you five minutes of imaginative thinking, this is me.

Hello, my name is Corinne.

My life’s journey has been one of ups and downs, highs and lows, calmness and chaos, extravagance and simplicity, kale and waffles (what?), and excitement to boot! I have led, and continue to lead, an amazingly crazy and wonderful life that just got a little more crazy and wonderful with the birth of my heart and soul, Narra.

Eric (my husband of almost 5 years, partner of 9 years) and I had carefully planned and orchestrated Narra’s arrival into our lives. We are PLANNERS! With both of us working in special education and the school system, we were READY and game to become parents ourselves. 3am feeds? No problem! Being knee-deep in snot, barf and other human excrement? Nothing we can’t handle! The inevitable tantrums that come with having a child? We’re teachers!! We’ve been living, eating and breathing tantrums, how to work through them, and most importantly, how to prevent them. WE’VE GOT THIS!!

Nothing could stop us from being the BEST parents ever. Not lack of sleep (or so we thought), poop, screaming, or crying. Nothing, that is, until the stork dropped off postpartum depression, anxiety and intrusive thoughts together with our beautiful baby girl, Narra.

Boy were we in for a ROUGH ride. A ride, that I am happy and proud to say has proven to be one of the best, most rewarding experiences of my life. This ride, which on some days, still does have its rough patches, has led me to a renewed commitment to my health and wellness, as well as the opportunity to motivate, inspire and support others.
