I have always known I wanted Narra to have a better relationship with food than I did as a child.

With the help of the new nutrition program I’m using, I’ve really had to check myself and see if anything I was saying or doing right now that was something I’d want HER to do or say about food.

So now….

instead of saying something is a cheat, it’s a TREAT!

instead of having to drink water, we GET TO drink water!

instead of having treats to cheer us up when we are sad, we have special treats to help us CELEBRATE the good times we are already having!

YOUR mindset becomes THEIR mindset.

A Song: Mindset Makeover

Every morning I wake up, before I put on my make up, I say a little prayer for the workout I’m about to slay up.

Saturday’s Cardio zoo is done, now it’s time to have some fun.

Monday’s Group is a MINDSET maker, emotional-eating-beating mover and shaker.

No sweat required, that’s extra credit. This program’s here to make you SHED IT!!!

Weight loss isn’t my goal. Except when it’s to try out a new program for my clients whose goals might be EXACTLY that.

Btw, I’ve already lost 3lbs in 2 days and on my PMS week too (seriously never happens)!

Healthy Pumpkin Cookies

The weather has been GETTING TO ME!! 😅

As much as I LOVE fall, the transition of weather has me all sorts of confuzzled (is that a word?? Now it is!). Season Affective Disorder (SAD) is alive and well! But I’m refusing to make it part of my story.

I choose to see love instead of this.

Narra and I managed to make it out to Strongstart (a FREE parent participation preschool program) despite the rain this morning. I was all sorts of proud of our determination to get our bodies moving. We played in the gym, had story time and then got crafty AF and made these cool Halloween crafts 🎃

Narra, who doesn’t typically enjoy “arts and craps” liked these ones! Bonus Points because I didn’t have to prep or clean up the art table 🙌😆

After lunch and TV, Narra and I decided we should do some baking. I looked to my trusted favourite recipe blog for inspiration and found the recipe for these HEALTHY PUMPKIN COOKIES!

Narra was stoked she got to crack an egg and then volunteered happily to put the pecans on top. Such a good fine motor and eye-hand coordination activity!

Omg, they are BOMB!! And the best of all, a serving is TWO COOKIES!!!

None of that ONE cookie BS. Lol.

I’m feeling pretty proud today AND accomplished.

When you have anxiety, big outings and projects like this can be hard to start and FINISH.

So I’m feeling accomplished!!!

Oh and I forgot to mention… I also feel awesome because I got to workout!!! 😍

Major modifications because of the ankle soreness but it’s DONE!! ✅

Yayyyyyy!!!

It’s time for me to get dinner started (anyone else having Taco Tuesday today??) but before I sign off, I just want to invite EVERYONE to my next online accountability group!!

Recipes!!!

I posted a picture last week on my Facebook of some wicked awesome coconut Curry Beef I made in the Instant Pot.

I love my Instant Pot. It has really changed the way I cook food. Like, hello? How else can you cook a whole FROZEN chicken in less than a hour?

.

Being a working mom, having meals I can set and forget and have ready in minutes is soooo important to me.

.

I’ll share more IP love with you all next time, but for now, I want to be good with my word and share my recipe with you!

Star Anise Chicken in the Instant Pot

Are you a perfectionist? Have you ever been so AFRAID to fail that it’s kept you from doingthe things you’ve always wanted to do?

.

That’s me right there. I am your classic case of perfectionism. I was pretty naturally good at a lot of things (boast post!) so when something didn’t end up working out for me or if it took more than one try, I was quick to give up and say “Sorry, man! Not for me!”

.

My perfectionist tendencies has kept me from doing LOTS of things. Including seemingly trivial things like trying new recipes.

.

I LOVE TO EAT. And cook. And eat. Haha.

.

But when it comes to trying new recipes, I’m going to be honest and say I get a little anxious if it doesn’t work out.

.

I’m afraid of failing. I’m afraid of the recipe being good enough and somehow it being conveyed as ME not being good enough. I’m afraid of wasting time, money and energy on something I worked really HARD on.

.

But what I’ve learned as coach through personal development and self-improvement has taught me that nothing great has come from comfort zones.

.

We live our happiest lives when we are learning and growing and it isn’t always easy to do that.

.

So when I decided to modify this recipe for the Instant Pot and make it my own, and actually SHARE it, it was a BIG step for me.  It meant I would be pushing outside my comfort zone. It meant I would be spending a little more time, money and energy than I really wanted to. But lady, was it ever worth it!

.

I’ve actually tried this recipe TWICE now and once it has failed.

.

But I never gave up. I didn’t quit.

.

After another time, I got it RIGHT!

.

Imagine if I had quit??

.

I wouldn’t be able to share this amazing recipe with you all!!!

.

Here it is. Star Anise Chicken in the Instant Pot!

.

STAR ANISE CHICKEN in the Instant Pot

.

Ingredients:

.

8 chicken thighs

2 tsps minced garlic

2 tsps fresh minced ginger

1/4 cup Apple cider vinegar

1 Tbsp honey

1/4 cup water

1/4 cup tamari or low sodium soy sauce

2 star anise pods

Juice of half an orange

.

Green onions for garnish

.

Method:

.

1. Press sauté function on pot. Brown chicken on both sides.

.

2. Add the rest of the ingredients into the pot.

.

3. Press cancel to stop Sauté function. Put lid on pot. Make sure it is set to “sealing”.

.

4. Press Manual button and set time for 15 minutes on High. Wait for the pot to count down until the chicken is finished cooking. Set and forget. Go play with your kids or read a book. ❤

.

5. Let the pot naturally release for 5 minutes and then do a quick pressure release to safely open the lid.

.

6. Serve and enjoy! 😋

Squash is my BAE

If you follow me on Facebook or IG, you know I’m a MAJOR squash fan. I usually have it roasted and with salt and pepper, sort of as a potato replacement for my meals..

I’m a diabetic VERY FAMILIAR with counting carbohydrates but since finding the 21 Day Fix, all I have to do now is count CONTAINERS! Yay!

.

I love the eating plan because you fill your containers with REAL low glycemic index food AND the portion control is taken care of (portion control is where I fail).

.

Another area I fail in, keeping my carbs low. I LOVE BREAD, GRAINS and RICE! But I know how it affects my mood and my blood sugars so I try to keep it within my allotted 2 YELLOW containers a day with the Portion Fix eating system. 

.

It used to be VERY difficult to do.. until I found SQUASH.

.

Yes!! Tastes like a yellow but it goes in your GREEN (veggie) container. And really, you can never have too many veggies.

.

Last week I put out a call for help on my personal Facebook page for more SQUASH recipes and this is what I decided to have for lunch this week:

I get by with a little help from my friends. 🎵

Here’s one for all the Instant-Potheads 😉 out there.

.

Ruby’s Squash Soup (Converted to IP by Katherine) [tweaked to match Corinne’s laziness levels]

.

Ingredients:

.

1 medium onion (chopped finely)

2 medium acorn squash (or any squash, peeled and cubed, about 5-6 cups)

3 medium carrots (peeled, chopped)

1 medium Apple (peeled, cores, chopped)

1 litre vegetable or chicken broth

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1 Tbsp olive oil (or any oil of your choice)

Method:

.

1. Turn on IP. Press SAUTE button. Once pot is warm, add oil and onion. Sauté until onions are translucent.

.

2. Add carrots to pot, squash and apple to the pot. Sauté for 4-5 minutes.

.

3. Add broth, cinnamon and nutmeg. Mix contents of pot.

.

4. Put the lid on the pot. Make sure the dial on the top of the pot is set to SEALING. Press CANCEL on front of pot.

.

5. Press the MANUAL button and + or – until the pot reads 10 minutes.

.

6. Walk away. Play with your kids. Do some crocheting or bullet journaling and forget about the soup.

.

7. Once the pot comes to pressure it will count down from 10 minutes.

.

8. It will BEEP once done but let it sit in the pot for 20 mins until it reads L0:20. This is the Non Pressure Release. You can skip this part and do a Quick Release but letting it sit in the pot makes it so you don’t have to blend the soup. This is where my laziness comes in.

.

9. Set dial to VENTING to release any left over pressure in pot. The pot will open EASILY if there is no pressure left.

.

10. Serve and enjoy. Make your family and guests think you were simmering this soup all day long. 💖😉🍵
